      Preheat your oven to 170°C (340°F). Line the bottom of a 7-inch (18cm) round cake pan with parchment paper and lightly grease the sides. Wrap the outside of the pan with aluminum foil to prevent water from seeping in during the water bath.

      Create a double boiler by placing a heatproof bowl over a pot of simmering water, ensuring the bottom doesn't touch the water. Add the chopped white chocolate and stir occasionally until completely melted and smooth, about 3-4 minutes. Remove from heat and let cool for 2-3 minutes.

      Whisk the egg yolks into the melted white chocolate one at a time, mixing well after each addition until the mixture is smooth and glossy. The mixture should be thick but pourable. Set aside to cool slightly while you prepare the meringue.

      In a clean, dry mixing bowl, beat the egg whites with an electric mixer on medium speed until foamy, about 1 minute. Increase to high speed and continue beating until stiff peaks form, about 3-4 minutes. The meringue should stand straight up when you lift the beaters and look glossy and smooth.
