Ingredients
- 1 canchickpeas (15 oz), drained and rinsed
- 2 tbspolive oil
- 2 tbsphoney
- 1 tspcinnamon
- 0.5 tspcayenne pepper
- 0.5 tspsalt
Instructions
- 1
Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper. Drain and rinse the chickpeas thoroughly, then spread them out on a clean kitchen towel or several layers of paper towels. Pat them completely dry, removing as much moisture as possible—this is crucial for achieving maximum crispiness.
- 2
Transfer the dried chickpeas to a large bowl and toss with 2 tablespoons of olive oil until evenly coated. Spread them in a single layer on the prepared baking sheet, making sure they're not touching or overlapping. Roast for 20 minutes, shaking the pan halfway through, until the chickpeas are starting to turn golden and feel slightly firm to the touch.
- 3
While the chickpeas are roasting, prepare the honey-spice mixture by combining 2 tablespoons honey, 1 teaspoon cinnamon, 1/2 teaspoon cayenne pepper, and 1/2 teaspoon salt in a small bowl. Whisk together until well blended and set aside.
- 4
Remove the chickpeas from the oven after 20 minutes and immediately transfer them back to the large bowl. While they're still hot, pour the honey-spice mixture over the chickpeas and toss quickly but thoroughly to coat every chickpea evenly with the sticky glaze.
- 5
Return the coated chickpeas to the baking sheet, spreading them out again in a single layer. Bake for an additional 12-15 minutes, stirring once halfway through, until the chickpeas are deeply golden brown and crispy throughout. They should feel dry to the touch and sound slightly hollow when you shake the pan.
- 6
Remove from the oven and let the chickpeas cool completely on the baking sheet—they will continue to crisp up as they cool, which takes about 10-15 minutes. Once cooled, break apart any chickpeas that stuck together and enjoy immediately, or store in an airtight container at room temperature for up to 3 days.
