Ingredients
- 2 slicesbread (sourdough, whole grain, or your favorite)
- 1 wholeripe avocado
- 2 wholeeggs
- 1 tbspbutter or cooking oil
- 0.25 tspsalt
- 0.25 tspblack pepper
- 0.25 tspred pepper flakes
- 1 tspfresh lemon juice
Instructions
- 1
Toast the bread slices in a toaster or in a dry skillet over medium heat for 2-3 minutes per side, until golden brown and crispy on the outside but still slightly soft inside.
- 2
While the bread is toasting, cut the avocado in half lengthwise, remove the pit, and scoop the flesh into a small bowl. Add the lemon juice, half the salt, and half the black pepper, then mash with a fork until mostly smooth with some small chunks remaining for texture.
- 3
Heat the butter or oil in a non-stick skillet over medium heat until it begins to shimmer and foam, about 1 minute. Crack the eggs carefully into the pan, keeping them separate, and cook for 2-3 minutes without disturbing them until the whites are set but the yolks are still runny.
- 4
If you prefer less runny yolks, cover the skillet with a lid for the last 30-60 seconds of cooking to gently steam the tops of the eggs, or carefully flip them for over-easy eggs.
- 5
Spread the mashed avocado evenly onto the toasted bread slices, making sure to cover the entire surface from edge to edge.
- 6
Using a spatula, carefully place one fried egg on top of each avocado-covered toast, positioning it in the center.
- 7
Season the eggs with the remaining salt and black pepper, then sprinkle red pepper flakes over the top for a touch of heat. Serve immediately while the toast is still crispy and the egg yolk is warm and runny.
